Ambrosia Apple and Sausage Stuffing Recipe

ambrosia apple turkey stuffingThis Thanksgiving, why not take your stuffing to a new level by adding Ambrosia apples? The recipe below is for a traditional sausage stuffing that is brought to a new height by adding Ambrosia apples. We find the sausage and apple combination to be quite wonderful, and we’re sure your guests will agree.

Ingredients:

  • 6-8 C unseasoned bread cubes (make your own with dry bread, or buy them premade)
  • 1/2 C butter
  • 1 C chopped onion
  • 1 C chopped celery
  • 1 C chopped Ambrosia apples (no need to peel)
  • 1 lb. pork sausage meat
  • 2 C chicken broth
  • 1 T fresh chopped rosemary
  • 1 T fresh chopped sage
  • 1/4 C fresh chopped parsley
  • Salt and pepper to taste

Method:

Preheat the oven to 350°F.
In a large sauté pan, melt the butter. Add the onions and celery and cook over medium heat, stirring occasionally, until the onions are translucent (5-10 minutes). 
In a large mixing bowl, combine the cooked vegetables, Ambrosia apples, herbs, salt, pepper and bread cubes.
In the same pan, brown the sausage, crumbling to ensure there are no big chunks.
 Add the browned sausage, including the fat, to the mixture in the bowl.
 Add the chicken broth and mix until the bread is soft and moistened.
Transfer the stuffing to the buttered baking dish and bake for 1 – 1 ½ hours, uncovered, until deeply golden and crisp on top. (NOTE: If you prefer to stuff into a turkey, make the stuffing a little dryer, as it can get mushy. Decrease the chicken broth to 1 ½ C and add the full 8C of bread crumbs.)
