Ambrosia Apple, Chicken, and Avocado Sandwich [Recipe]

A Modernized Version of Grandma’s Chicken Salad Roll

Ambrosia apples and chicken saladWhether you remember the heyday of chicken salad as a picnic staple or it’s just something your grandmother used to make, this updated and lighter version gives this old favourite a new appeal.

The main complaint about chicken salad (and the reason it fell out of favour) was that it was a bit heavy on the mayonnaise. It just didn’t quite fit into a health-conscious approach to eating.

This lighter version has a fraction of the mayonnaise and, if you want to make it even healthier, use the vegan mayonnaise recipe we shared in this blog.

To keep with the trends (and make sure we’re getting enough healthy fats), we’ve also added avocado to the mix. We recommend blending half of the avocado with the mayonnaise to get the creaminess of Grandma’s chicken salad without the goopiness.

It’s always nice to make these sandwiches with fresh bread from your local farmers’ market but you can also stuff them into a pita, make a wrap, or use lettuce leaves to keep it low-carb and gluten-free.

If you’re tight for time, you can use pre-cooked rotisserie chicken. Otherwise, you’ll need about two baked chicken breasts for this recipe.

Ingredients:

  • 3 cups cubed or shredded cooked chicken
  • 1 avocado (divided – half cubed)
  • 1 Ambrosia apple (cubed)
  • 4 leaves of lettuce
  • 2 Tbsp Mayonnaise
  • ½ tsp garlic powder
  • Salt and pepper to taste

Method:

  • In a bowl, add half the avocado to the mayonnaise, and blend until fully incorporated.
  • Add remaining ingredients and gently stir until coated.
  • Season with salt and pepper to taste.
  • Chicken salad can be served right away or chilled.
  • Layer thickly on bread or into wrap with lettuce and serve.

This chicken salad recipe is very versatile. You can pop on top of a bed of greens to create a meal or stuff it into bite-sized rolls or lettuce purses for an appetizer.

If you’re looking for some flavour variety, try adding hot sauce or cilantro to the mix. Cheddar cheese also goes nicely in these sandwiches. For extra crunch, add walnut pieces and slices of Ambrosia apples on top.

However you serve it, your family and friends will love that it’s creamy, crunchy, and so much healthier than it used to be.
