Ambrosia Apple & Feta Salad with Roasted Almonds

Ambrosia apples saladWith the warmer weather, who doesn’t enjoy a good salad? The dressing on this one is easy and light, with just a hint of sweetness. The addition of parsley to the greens gives a nice fresh taste, and the feta cheese and Ambrosia apples are naturals together. This salad is a perfect accompaniment to any dish, and it travels well, so can be packed for a picnic lunch as well.


  • 5c Mixed greens 
  • 1c fresh parsley – chopped
  • 1 Ambrosia apple – sliced
  • 1c feta cheese – crumbled
  • 1 small shallot (or red onion) chopped
  • ½ c roasted almonds



  • 2 cloves garlic
  • ¼ c white balsamic vinegar
  • ¼ c olive oil
  • 2 T strawberry jam

In a food processor, chop garlic. Add vinegar, jam, and pulse the olive oil in until it is mixed. Adjust ingredients and season to taste.

Mix the greens, parsley, and shallot and toss in the dressing. Top with the feta, almonds and Ambrosia apple.
