Ambrosia Apple Ice Pops
Frozen Treats Full of Flavour and Goodness
Many of us grew up with homemade frozen treats but they eventually gave way to the convenience of store-bought varieties. DIY ice pops and popsicles are back in style and for good reason. Homemade frozen treats have less sugar and you can load them up with wholesome, local fruit.
We love using Ambrosia apples in our freezer treats. To maximize the nutritional value, simply core an apple and pop it into a high-powered blender (skin on). This helps your Ambrosia ice pops retain more fibre and nutrients compared to using strained apple juice.
You can simply pour this juice straight into popsicle molds or ice cube trays to create simple, tasty frozen treats. Alternatively, you can purchase empty ice-pop bags or freezer pop tubes. We like the earth-friendly, reusable silicone sleeves for making Freezee-style ice-pops.
Once you have your basic Ambrosia apple juice, you can get really creative. Here are a few tasty options for you.
Ambrosia Apple and Berry Pops
This one is all fruity goodness. You can add any local fruit that’s fresh from your Farmers Market like blueberries, raspberries, blackberries, cherries, or strawberries. Start by placing diced fruit into popsicle molds. Pour blended Ambrosia apple juice in until just before the fill line.
Some people prefer to cook down the fruit and add sweetener like honey or maple syrup but we like them frozen fresh.
Ambrosia Apple Peanut Butter Yogurt Pops
Would you like your ice-pop to be a well-balanced snack? Then, you’ll love this recipe. Stir equal parts peanut butter and Greek yogurt together (about half a cup of each to make 6 popsicles). Add Ambrosia apple juice equal to the amount of the combined peanut butter and yogurt mixture (about one cup for 6 popsicles). You can mix it all together until fully combined or leave ribbons of yogurt if you prefer. There’s an option to add a bit of honey but we find that because Ambrosia apples are naturally sweet, you don’t need it.
Ambrosia Apple Pie Pops
These taste just like apple pie on a stick! Start with 2 blended Ambrosia apples. Add 2 teaspoons of cinnamon and a dash (each) of nutmeg, allspice, and ginger. If you have a sweet tooth, you can add some maple syrup.
If you want these to taste like Ambrosia apple pie a la mode, pour a little juice in and let set in the freezer for an hour or until ice particles are just starting to form. Next, gently add a tablespoon of soft (slightly melted) vanilla ice cream then fill up mold with cold juice. If done right, the ice cream should be suspended in the middle.
Tips for Popsicle and Ice-Pop Making
- If you have set molds with lids that lock on, put the stick-lids on right away and freeze.
- If you’re using wooden sticks you can use tin foil covers to hold them in the centre or wait two hours before inserting.
- Always allow at least 4 hours for ice to set (depending on the size of the molds and efficiency of your freezer).
- Run warm water over the outside of the plastic or metal molds to help the popsicle release fully.
- Use a funnel to help you fill when using ice-pop bags or tubes.
- Always fill just shy of the ‘fill line’.
