Ambrosia apple recipeThere’s something special about scrambled eggs. Maybe it’s that scrambled eggs are often the first thing we learn to cook. It could be that you can have them for any meal, any time of day. Perhaps it’s because they are perfectly simple and don’t require a lot of effort.

They may be simple but that doesn’t mean we can’t elevate the humble scrambled egg.

This recipe takes scrambled eggs to a new level by adding a very unexpected ingredient – Ambrosia apples. It sounds a bit strange, we know, but the flavours really work. Plus, it adds nutrients to your meal as well as making the eggs even fluffier.

Ingredients:

  • 1 small Ambrosia apple (grated)
  • 8 eggs
  • 2 green onions
  • 1 Tbsp butter
  • ¼ cup grated cheddar cheese
  • Salt & Pepper to taste
  • Chives (diced) for garnish

Method:

Beat eggs in a bowl.

Stir in grated Ambrosia apples (peeling is optional).

Heat butter in a pan until it foams.

Sauté green onions until soft (be careful not to burn the butter).

Add egg mixture to the pan and stir slowly until almost cooked.

Season with salt and pepper if desired.

Sprinkle shredded cheese over eggs and stir until incorporated and eggs are cooked.

Garnish with diced chives.

 

We love to serve this dish for brunch with some fresh salad greens but you really can serve it any time of day. Another option is to fold sautéed onions and diced Ambrosia into a cheese omelet.
