Come Dine With Me in North Vancouver

Welcome to our next installment of Come Dine With Me… At Home!

The premise is simple: create a three-course menu with Ambrosia apples as the star of each dish. Home cooks can choose their recipes from the Ambrosiaapples.ca website, and can substitute anything they want on any of the recipes – or create their own — but all the dishes must include Ambrosia apples. Everyone is instructed to choose one appetizer, one entrée, and one dessert. Cocktails are optional.

John does most of the cooking for this busy family, and is always looking for different menu ideas. He loves to cook, and has shared that passion with his children. He has never cooked with Ambrosia apples before. Tessa, at 13, is considered the family’s “apple connoisseur,” and she joined him on this Ambrosia apple culinary adventure, which they prepared for the entire family of four.

Their first course was shrimp and Ambrosia apple cocktail. “I started with marinating sliced Ambrosia apples overnight in lemon and fresh mint,” says John. ”I then grilled shrimp skewers with a few spices and placed them in the apples.” They were so good, 11-year-old Rostin went back for seconds!

Ambrosia Apples Stuffed Pork LoinNext it was Pork Loin Stuffed with Provolone and Ambrosia apples. “I marinated pork loin in olive oil, S&P and the juice of fresh salsa,” John explains. “I then stuffed it with a slice of provolone, Ambrosia apples, garlic, ginger and red onion, and braised it with the juice of a half of an apple that I shredded in the blender. They turned out very tasty.”

Tessa made Ambrosia apple cinnamon rolls for dessert. “The Ambrosia apples added a really nice snap to the cinnamon rolls I usually make,” she says. “I think I’ll add them again!”

“We all really enjoyed the challenge,” says John. “I would cook with Ambrosia apples again but maybe not all in one meal!”
