
Ambrosia Apples Cookbook – Apple Bacon Cheddar Crisp

A bacon twist on apple crisp!
Ingredients:
Filling
- 5 Ambrosia apples, peeled, cored and diced
- 175 ml brown sugar
- 35 ml cornstarch
- 6 ml cinnamon
- 90 ml/grams sharp cheddar, grated plus
- 55 ml port
Topping
- 120 ml brown sugar
- 120 ml butter
- 120 ml white flour
- 240 ml quick oats
- 60 ml/gram sharp cheddar, grated
- 5 bacon strips, cooked crispy and crumbled
Directions:
Pre-heat oven to 180°C (350°F)
Filling
Place diced Ambrosia apples into a large bowl.
Mix the 175 ml brown sugar, cornstarch, and cinnamon in a small bowl. Add this to the apple and toss to coat. Add the 90 grams grated cheddar and toss to mix. Put into an 8×10 baking dish. Drizzle the port over the top.
Topping
Cream the butter and 120 ml brown sugar in a large bowl. Add the white flour and mix. Add the quick oats and 60 grams of grated cheddar and mix. Sprinkle in the crumbled bacon and mix.
Spread this mixture evenly over the top of the apples.
Bake for 40-45 minutes until the top is golden brown and the apples are soft. Serve warm or at room temperature.
