August 2021 – A Hot Dry Summer
With fires raging in our beautiful province, many of our Ambrosia farmers, their families, support staff, and casual workers are affected. Please join us with prayers for all of them, and help us thank the firefighting crews that are on the ground now saving our forests, homes, and orchards.
Time marches on, though, and our Ambrosia farmers are trying their hardest to get their trees in perfect shape before harvest, ensuring that only the best Ambrosia apples arrive in the produce sections of your favourite store.
Ambrosia Apple A Day Update
Patricia is still eating her Ambrosia apple every single day. “It’s really not a hardship at all,” she says. “Sometimes I even eat two: one cut up fresh and then one in a salad, like an Ambrosia Apple and Poppy Seed Slaw [recipe below].
“I really enjoy this Ambrosia and Kale Salad, and will make it, or a slight variation, about once a week. The dressing is incredibly refreshing, so I will sometimes just make that and pour it over some romaine lettuce as a side. Simply delicious!”
Fun Facts About Ambrosia Apples
Recipe: Ambrosia Apple and Poppy Seed Slaw
- ¼ cup Greek yogurt
- 2 Tbsp mayo
- 1 lime
- ¼ cup poppy seeds
- Salt and pepper to taste
- 1 cup shredded green cabbage
- ½ cup shredded fennel
- ½ cup shredded carrots
- 1 Ambrosia apple shredded
Combine all the dressing ingredients and pour over the vegetables and Ambrosia apple. Mix well and enjoy. For a quick alternative, you can also use a bagged coleslaw and add the Ambrosia apples and poppy seeds, but I find the tang of the lime juice quite refreshing, so I’d keep the dressing.
