Campfire Roasted Ambrosia Apples [Recipe]
A Tasty (and Healthy) New Way to End Your Camp Meal
There’s something special about food cooked over an open fire. It might be the subtle smoky flavour or perhaps it’s that it usually happens on a camping trip. Unfortunately, the go-to campfire treats are laden with sugar and seriously lacking in nutrition. This camping dessert recipe doesn’t fall into that trap! It tastes like apple pie, is easy to make and is healthy to boot.
Here’s how to make Campfire Roasted Ambrosia Apples:
Cut out the core of a medium-size Ambrosia apple. Try to keep the apple intact by slowly scooping out the core and seeds from the top. You can use an apple corer to get the job started but don’t go all the way to the bottom. If you do break through the bottom, that’s okay, it’ll just be a little messier. The cavity should be 2-3cm wide when you’re done.
Inside the cavity, place 2 teaspoons of butter, 1 teaspoon of Demerara sugar (you can substitute with white sugar or brown sugar but we like the caramel flavour-notes in Demerara), and a pinch or 2 of cinnamon and nutmeg (according to your taste). You can also add a few chopped walnuts, if you like.
Wrap the filled Ambrosia in 2 layers of tin foil. Make sure the whole apple is covered and there are no holes where the butter or apple juices might seep out.
Prepare a place in the fire where the coals are red hot but there aren’t many flames. Essentially, you’re looking to create a little bed of coals to serve as an oven for your apple bundle.
Place the wrapped Ambrosia apple directly onto the hot coals for 5 minutes and then, using tongs or a couple of smooth sticks, flip it over and let it roast on the other side for another 5 minutes. Be careful not to rip the tin foil in the process!
Remove the Ambrosia from the fire and allow to cool. Don’t unwrap it right away because it will be very hot! Once it’s cooled down a bit, open the foil at the top and check for doneness with a fork. You can wrap it back up and pop it back in the fire if it’s not soft enough but usually a total of 10 minutes on red hot coals will do the trick for a medium sized apple.
Enjoy! You can unwrap it, chop it up and serve in a bowl or just use the tin foil as a bowl (who wants to worry about washing up when you’re camping?)
