The weather is warming up, and many of us are excited to use the grill again! Today’s recipe includes Halloumi cheese which may not be an ingredient you have worked with before – here is some information about this delicious and versatile cheese.

Halloumi is a semi-hard, unripened cheese typically made from goat and sheep’s milk, although sometimes cow’s milk is also used. Halloumi has a high melting point, which makes it an ideal choice for grilling or frying, as it maintains its shape and texture.

Halloumi has a salty flavour and a distinctive, slightly rubbery texture. Halloumi commonly appears as a starter or a main course in salads or sandwiches in Mediterranean cuisine. Halloumi is also a popular choice in vegetarian recipes.

Paired with the sweetness of the Ambrosia apple, this dish is a perfect blend of sweet and savoury which will delight your tastebuds!

Chicken, Ambrosia and Halloom Skewers

Ingredients:

  • 2 chicken breasts, boneless/skinless, cut into 2.5 cm pieces
  • 2 Ambrosia apples, cut into 2.5 cm pieces
  • 1 package Halloumi cheese, cut into 2.5 cm pieces
  • 6 ml apple cider vinegar
  • 35 ml Maille Old Style Mustard
  • 6 ml honey
  • 3 ml olive oil
  • 34 ml of Greek yogurt
  • Salt and pepper
  • Skewers – soak bamboo/wood for 30 minutes before assembling.

Dip/Marinade

Mix apple cider vinegar, mustard, honey, oil, Greek yogurt, and a pinch of salt and pepper in a bowl. Separate the mixture into two bowls. Set aside.

Assembling the Skewer

Alternate Ambrosia apple, chicken and Halloumi cheese on the skewer. 4 – 6 pieces for longer skewers, 2 – 4 for shorter ones. Once all skewers are prepared, brush on some reserved marinade from one of the bowls you set aside. Save the other bowl for a dipping sauce for later.

Preheat the grill or grill pan to medium heat. Grill skewers for about 10 minutes, turning regularly. Chicken is ready when there is no pink inside.

Serve with a reserved bowl of dipping sauce.

Makes about 16-20 smaller kabobs.
