
Chicken and Ambrosia Apple Salad Boats
As Summer approaches, we are all yearning for lighter fare. This fun appetizer is a great way to start a meal or as a side. It gives a nod to a classic chicken salad sandwich but is much fresher, healthier and gluten-free. Plus, it doesn’t take long to make. Serve them in the shape of a canoe or roll them up into a kayak – whatever floats your boat.
Ingredients:
2 cups, cooked chicken breast, diced
2 celery stalks, diced
¼ cup spring onions, diced
1 medium Ambrosia apple, cored and diced
¼ cup walnuts, chopped (optional)
Romaine lettuce, washed
Dressing:
2 tbsp mayonnaise
2 tbsp plain yogurt
Juice of 1 lemon
¼ cup fresh parsley
Salt and pepper to taste
Method:
In a medium-size bowl, combine chicken, Ambrosia apples, celery, spring onions, and walnuts. Add all dressing ingredients to the salad bowl and toss until evenly coated. Spoon into romaine lettuce boats. You can also use radicchio, iceberg, or Boston lettuce.
Boats can be eaten like canoes or rolled into kayaks.
