It’s summer, which means that we are all eating a lot more salads. Ambrosia apples make a fantastic addition to just about any salad creation by adding a little crunch and sweetness.

Here are a few of our tried and true favourites:

Ambrosia apple saladsAmbrosia Apple & Feta Salad with Roasted Almonds

This one is a favourite around our house, and is one of the many salads featured on our website. We sometimes mix it up by using baby spinach instead of the mixed greens, and honey instead of the jam. A nice sweet white onion is another option. Play around! Make it your own!

Ingredients:

  • 5c Mixed greens 
  • 1c fresh parsley – chopped
  • 1 Ambrosia apple – sliced
  • 1c feta cheese – crumbled
  • 1 small shallot (or red onion) chopped
  • ½ c roasted almonds
  •  2 cloves garlic
  • ¼ c white balsamic vinegar
  • ¼ c olive oil
  • 2 T strawberry jam

In a food processor, chop garlic. Add vinegar, jam, and pulse the olive oil in until it is mixed. Adjust ingredients and season to taste. Mix the greens, parsley, and shallot and toss in the dressing. Top with the feta, almonds and Ambrosia apple.

This delicious salad was first introduced when it took second prize in one of our original recipe contests. It was also featured in one of our earliest Come Dine With Me blogs, and Daniela says it’s a regular at their place still. We can see why! Easy, nutritious, and delicious. What else could one ask for in a salad?

Ingredients

  • 4 cups packed raw kale torn into small pieces
  • 2 large Ambrosia apples cut into small wedges (save 1/4 cup for dressing)
  • 3/4 cup roasted walnuts ( save 1/4 cup for dressing)
  • 1/2 cup raisins
  • 1 cup thinly sliced celery
  • 2 Tbsp. lemon juice
  • 2 Tbsp. honey
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. water
  • 1/4 tsp. sea salt
  • 1/4 tsp. black pepper

In a large bowl put kale, apples, walnuts, raisins, and celery. Toss thoroughly. In a blender put the 1/4 cup of apples, 1/4 cup of walnuts, lemon juice, honey, mustard, water, sea salt and pepper. Blend well. Pour the dressing over the kale mixture. Adjust the amount you use depending on your taste preference.
