Ambrosia Apple Lentil Soup Recipe
Spring is on its way! This fresh and lively soup is sure to warm your tummy and your heart in these last days of Winter. Try it with some Naan bread… Mmmmmm Ambrosia!
Ingredients:
- 1 Tbsp coconut mil
- 2 onions, diced
- 2 carrots, peeled and diced
- ½ tsp finely minced garlic
- 2 Ambrosia apples, peeled and diced
- 2 tsp cumin
- 2 tsp turmeric
- ½ tsp cayenne
- ½ tsp ground ginger
- 1 tsp garam masala
- 1 tsp ground coriander
- 1 tsp salt
- 1½c red lentils, rinsed
- 4c vegetable broth
- 2c Ambrosia apple juice
- 1c coconut milk
Method
- Add coconut oil to medium size pot.
- Stir in onions and carrots.
- Sautee on medium heat until onions are translucent.
- Add garlic and stir.
- Add Ambrosia apples and stir.
- Add spices and salt.
- Stir in lentils, broth, and Ambrosia apple juice.
- Simmer on low-medium heat for 30 minutes or until lentils are soft.
- Remove from heat.
- Stir in coconut milk.
- Puree.
- Garnish with fresh cilantro and serve.

As you know, this virus has had far reaching implications for all of us. A number of events, including Ambrosia apple sponsored curling events, and the Saskatoon Homestyles Show (see below) have been postponed or cancelled.
We are doing our best to keep Ambrosia apples at your local grocery stores, and will continue to do so.
