May 2021 – It’s Blossom Time

It’s the most beautiful time of year in the Okanagan. The orchards are bursting with apple and cherry blossoms, and the vineyards are exploding with new growth. The air smells of lilacs and the sun is shining. In the Ambrosia apple orchards, farmers are working hard to ensure the best Ambrosia apples arrive in your produce aisle this Fall. Patricia’s been eating her Ambrosia apple every day this year. “I honestly can’t imagine NOT eating my daily Ambrosia apple,” she says. To make it very easy to maintain the challenge, a good apple slicer is a must. With one motion, an apple is divided into eight portions and the core is removed. “I slice my Ambrosia up in the morning and wrap it in a napkin for a snack later in the day,” Patricia tells us. “Because the Ambrosia apple is so slow to brown, it says fresh for hours, even in a cloth napkin.”

Patricia also uses her slicer to start the process for cubing the apples for her Instant Pot applesauce. “I make applesauce quite often,” she says.”I find it a very easy and healthy way to sweeten up and add a boost to savory dishes.” She employed the applesauce for this exact purpose in the Citrus Halibut dish featured below.

Patricia’s Citrus Halibut with Ambrosia Apple Sauce

  • 2 halibut fillets
  • 1 lemon
  • 1 grapefuit
  • ½ lime 
  • 2 T butter
  • ¾ c Ambrosia applesauce
  • Ground pepper and salt to taste

Segment the fruit and cook with the butter on med-high heat in a sautee pan. Reduce to a pulpy consistency. Add the apple sauce and cook until bubbling. Move the sauce to the side of the pan and add the halibut to the centre of the pan so that it sears on one side. Cover the pan and cook for 7-10 minutes or until the fish is cooked. Serve with sauce on top, and garnish with fresh black pepper.
