Roasted Ambrosia Apple Hummus
Hummus is a fantastic, healthy snack, appetizer, or spread. It’s full of good fats, protein, and fibre. Served with fresh veggies or crackers. We love to serve Ambrosia apples with hummus instead of crackers. Ambrosia apples are crisp so you can scoop with confidence whether you’ve cut them into slices or wedges. The creamy, nutty flavour of the hummus combines perfectly with the sweet yet tangy flavour of the Ambrosia apple.
1 roasted Ambrosia apple
1 clove garlic
2 tbsp lemon juice
2 cups chickpeas
1 ½ tbsp olive oil
¼ cup sunflower butter
½ tsp salt
A handful of roasted sunflowers for garnish (optional)
Pre-heat oven to 400° Core and chop a medium to large Ambrosia apple. Coat the apple chunks lightly in olive oil. Roast at 400° for 20 mins. Check to make sure apples are soft before removing from oven. Allow to cool. Blend roasted Ambrosia apple chunks with remaining ingredients. Garnish with roasted sunflowers and serve with Ambrosia apple slices.
